Whether it’s a warm bowl of chowder in the winter months, or a refreshing gazpacho in the summer, there’s something about a bowl of soup that instantly brightens our day. The nourishing and comforting treat always reminds us of home.
Maybe that’s why we’re so enamored with Beautiful Soup, a Detroit-based pop up with a strong focus on local and seasonal ingredients. Each of their soups are made from scratch, starting with homemade chicken or vegetable stock.
Beautiful Soup offers a new selection of soups every month, slow cooking comforting, seasonal varieties with lovely flavors and gorgeous colors. Currently on the menu are scrumptious soups like African peanut stew, roasted tomato bisque, and classic chicken noodle.
Other delectable bowls include lemon lentil, pumpkin, three potato chowder with cilantro and lime, and Italian wedding soup. Their butternut squash soup with turkey and kale is savory and comforting with sweet, nutty notes – the perfect winter blend. Beautiful Soup also bakes homemade bread to accompany each bowl of soup.
At their pop-ups and catered events, they serve up yummy salads and other small bites which pair nicely with their seasonal soups. The delicious chili lime quinoa salad is loaded with veggies and black beans. Lemon cashew chicken salad, and cranberry and feta pinwheels are packed with wonderful flavor.
The cauliflower fritters are very popular, served with a lemon dipping sauce. We love the sweet potato wraps with garlic hummus, roasted red peppers, and shredded carrots, which are light but satisfying and comforting.
If you ever see the pear and apple grilled cheese with bacon and garlic aioli on the menu, you must try it. All at once savory, sweet and salty, it hits a flavor and texture homerun every time. The garlic aioli sends it over the top.
Angela Dagle is the chef and mastermind behind Beautiful Soup. Angela completed FoodLab Detroit’s business planning boot camp, and in D:Hive’s BUILD class for entrepreneurs. She started Beautiful Soup in January 2012 with the mission of delivering simple, well-crafted foods that conjure up images of home and comfort. The name Beautiful Soup comes from the song the Mock Turtle sings in Alice in Wonderland.
You can find Beautiful Soup at the Bottom Line Coffee House in Midtown, at Grandmont-Rosedale’s Always Brewing, and at pop up events across the city. Their soup is also available through Gourmet Everyday’s meal delivery service. In warmer months you’ll find them at farmer’s markets all across the metro area.
