The interior of this Library Street cafe has an earthy vibe: walls dripping with reclaimed wood, clean white chairs set around wooden tabletops, and a gardening tool-motif adorning the walls. There’s a lunch counter along the front wall where a garage door style window retracts up to let in the fresh air and sunshine.

7 Greens has a fast-casual ordering style where you can build your own custom salad from seven types of lettuce. Did you know there are at least seven types of lettuce? (We did not…)

The name “7 Greens” is a nod to that selection. You can have up to two types of lettuce for your bowl, choosing from arugula, baby spinach, iceberg, romaine, kale, mesclun, and napa cabbage.

If you’re looking for vegetarian, vegan or gluten free options, this place is a gold mine.  7 Greens offers more than 50 different veggies, fruits, nuts, cheese, grains and other toppings. The roasted tofu is very good, and there are lots of interesting veggies like the addictively scrumptious roasted brussel sprouts (this too should be a lettuce, we could eat bowls and bowls of it).

Meat lovers won’t be left out in the cold, though. You can add delicious proteins like citrus poached shrimp, bacon, and roasted chicken to your salad. All of their sauces (aka dressings) are gluten free. Each salad comes with a slice of 7 Greens gluten free bread.

If you’re overwhelmed with options, the “classic” salads take the guesswork out of lunch. We could eat the Dan Dan salad every day. It is tossed with crisp romaine, mesclun, arugula, grilled chicken, green beans, red onion, dried Michigan cherries, pepitas, roasted brussel sprouts, crumbled bleu cheese and a creamy maple sauce.

Maurice Who? tosses crisp iceberg and baby spinach with sweet gherkin, aged manchego, hard-boiled egg, roasted turkey, prosciutto, parsley and 7 Greens’ maurice sauce. If you’re a fan of kale, try the Yoga Girl or the Kale You Later, which mixes kale with green apple, green onion, golden raisins, slivered almonds, shaved parmesan and a citrus tahini sauce.

Though salads are the stars of the show here, 7 Greens also offers luscious soups like roasted corn chowder, chicken tortilla or chicken sausage, a collard greens and black eyed peas soup, or the roasted red pepper, tomato and goat cheese.

A chocolate chip maple cookie makes a perfect sweet finish to your meal (go ahead and indulge – you had salad for lunch, remember?). You can tell their homemade because each one looks just a bit different. Slight variations in the shape and size do not affect the flavor, though – we taste tested several to make sure.

You can also build your own granola bowl, with toppings like house-made peanut butter, apples, kiwi, banana, organic maple yogurt, and roasted walnuts.
